Creamy Spinach Chicken

This is a ridiculously simple and tasty recipe that packs in plenty of protein and gets you a couple of your 5 a day too!


Serves 1

250g chicken breast, sliced into strips (If you are using the PN method of portion control, remember, ladies get 1 palm sized serving and guys get 2 for protein)

2 large handfuls of spinach

6 cherry tomatoes

50ml of single cream

Salt and pepper

1 tsp of coconut oil


Heat a medium-sized pan and melt the coconut oil, when it’s hot, add the chicken and cook for a few minutes. Also, stick the kettle on to boil.

Meanwhile, slices the spring onions and when the chicken is almost cooked through, add them to the pan along with the cherry tomatoes.

Put your spinach into a sieve and over the sink, pour the boiling water from the kettle over the spinach to wilt it. Make sure it’s drained properly, and add it to the pan. By now your chicken should be cooked through and the tomatoes will be hot and starting to split a little.

Pour in the cream and bring to the boil briefly.

Remove from the heat and season with a little salt and pepper.
